Coffee is at its best in the days just after roasting. Here is why we roast the week you order, and never before.
Green coffee keeps for months, but roasted beans do not. From the moment they leave the drum they begin to give off CO2 and, with it, the aromatics that make a cup taste alive. Most supermarket bags were roasted weeks or months ago; by the time they reach you the peak is long gone.
We roast in small batches against real orders, then ship within a day or two. That means the bag on your counter is measured in days, not months. Rest it three to five days for filter, a touch longer for espresso, and you will taste the difference in the first pour.
